Lunch - Quinoa mixed with spinach, firm tofu, salmon, and a border of avocados.
Lunch from last week that I forgot to post!
Whole wheat pita bread with avocado spread and a fried egg on top. Almost like a avocado and egg pizza…..almost.
Lunch - broiled broccoli, steamed baby carrots w/ sesame seeds, and a guacamole grilled cheese sandwich.
Bagel I had Saturday with Swiss cheese, cream cheese, avocado slices, alfalfa, and tomato.
Garden Lite- Roasted Vegetable Souffle
It’s amazing how this dish is only about 150 calories without the cheese I added! I add some brown rice to it to give it more texture, but the cheese itself was enough for me today :)

A Healthy Lunch = A Good Day Ahead
I finally got to preparing a lunch for myself tonight! Quinoa with mushrooms and eggplant, cucumbers and corn kernals.
Apples, grapes, and an orange for snack :)
*Sorry for the lack of nice lighting. I hate artificial lighting too.
The Lime Truck
We had a food truck event at my school today, and I decided to try out The Lime Truck. I got the Sweet and Spicy Steak taco (yes, I know, my no red meat diet is ruined for this month) and a Strawberry Coconut Limeade. My friend got her carnitas fries, which also looked pretty yummy tbh, but I wasn’t that hungry and it looked like it wouldn’t be too good for your arteries :P The food and drink were pretty decent, but totally overpriced for a single taco? (like really? $4 for two bite? .__.)

Lunch: After a not so healthy day of eating, I decided to make myself a veggie salad dish for lunch. I had this alongside with an egg and and some baked sweet potato chips.
